Vegie Stir Fry Eleanor Style

Ingredients

Vegetables (suggested only, use what you want except lettuce!):

  • Greens (runner beans, cauli, broccoli)
  • Capsicum
  • Bok choy/chai sum/kay lan
  • Water chestnuts
  • Bamboo shoots (if you’re not careful)
  • Mushrooms
  • Snow peas
  • 1 small onion or half a large one
  • 1/2 tsp garlic
  • Sesame oil
  • Salt, sugar
  • Soy sauce
  • Sweet chilli sauce (sliced chillies)

Wash your greens (shouldn't have let them get that way you know)

Chop up vegies

Heat oil add 1/2 onion*, fry few min then add garlic also for a few min.

Add greens & stir fry.

Add water chestnuts/bamboo shoots/capsicum & stir fry

Then add snow peas/mushroom/bok choy, 2 tblsp vege stir fry sauce or oyster sauce & stir fry

Add dashes of soy sauce, salt, sesame oil for a few minutes till done.

Stir in a tsp of lemon juice or vinegar and some sweet chilli sauce (alternative: use fresh chopped chillies and fry with onions above* ginger can be also added if desired)
