Chop up 1 eggplant & microwave (1000W) 3 min
Heat oil (generous amount, soaks up a lot)
Add 1 onion (chopped of course silly).
Fry a little then add garlic and 1/2 tsp ginger paste (more when Helen not eating).
Alternative: add sliced ginger. Fry for a short time only, a minute or 2.
Add brinjal stir, add 1/2 tsp salt, splashes of soy, 1 tsp sesame oil & sweet chilli sauce (or sliced chillies and 1/2 tsp sugar)
